TOMME FERMIERE D'ALSACE
This raw milk cheese is born at the bottom of the mountains of Vosges. It was usually made during the months of May and June when the sales of Munster were going down because of the high temperatures. To develop the taste, Jacques Hennart proposes the same cheese but smoked with beech wood.
